Mojito
 
2 oz Cuban rum or Bacardi
1/2 llime, quartered
1-2 tsp superfine sugar
3 oz club soda
3 sprigs fresh peppermint or spearmint
a few pieces smashed ice (not crushed)
 
 
1 Squeeze lime into a  highball glass, then muddle (bruise) lime wedges, sugar and 2 sprigs of mint with a muddler, or wooden pestle or spoon.
2 Stir well and add rum, preferably Havana Club or, failing that, Bacardi.
3 Add ice, club soda and stir.
4 Garnish with fresh mint

It is said that the mojito was invented in a popular Havana restaurant called La Bodeguita del Medio. It's one of the few drinks that actually refreshes your breath, because it is made with mint. It is an aromatic drink, slightly sweet, and it has a citrusy flavor. Writer Ernest Hemingway was a customer of the Bodeguita and enjoyed mojitos.
 
It's normally pronounced mohito but the Cubans usually pronounce it more like morito.The word mojito may derives from the word mojo meaning to blend, combine, assemble (also apparently meaning seasoned in Cuban Creole) or from the verb mojar, meaning to wet. 

 

The actual variety of mint used is locally called a Yerba Buena (good herb) and is a little different to spearmint (more like delicate peppermint). There are of course many recipes- some people use bitters, some use a darker rum and some swear by a mojito made with raw sugar cane or cane juice and garnish with a sliver of sugar cane. Incidentally, the latter version is possibly closest to the Cuban original.
